In the article it mentions daily backups, but when I look at the creation times, these are weekly backups. Is there a place in the NX Witness GUI where I can configure this ?
Also the timeformat: esc_<build_number>_<time_stamp>.db
So the timestamp is the 162.._timer ? What does this represent ?

It is not allowed to be configured by the user. Nx Witness creates backup files automatically without the user’s involvement on a weekly basis, not on a daily. We'll fix this in the article.

In time format, numbers such as 162... represent the Unix Timestamp in milliseconds.
Values such as (timer, manual, merge, etc.) indicate the reason for the backup.0 -
