Hey BenYou will need to manually update to 5.1 as it is a Beta update. Or wait for the stable release. Hope that helps

After running the commands service still fails to start. Will reinstall with 20.04 until support for newer versions is available.

Seems there is an issue with this version. There is another thread earlier with the same issue. Upgrading to 5.1 works fine and no issue. Think I have lost my config and setup now so I will wait ...
