Add historical metrics to the Server Monitoring

For the Server Monitoring that is accessible via the GUI, it would be great to also have historical metrics logged and also be able to displayed for the last X hours or X days. I can also suggest making how far historical metrics being available for being a configurable field with a default of 7 days as an example.

This would be very useful to see when troubleshooting issues and trying to determine if any of the server components are hitting bottlenecks and would save users from having to implement other monitoring solutions to run alongside NX Witness.
